One of my favourite Thai dishes is a delicious coconut soup. I made Tom kah soup using only the main ingredients. The one thing that was missing was a Thai curry paste, but nothing was going to get in the way of my love for this soup. So you guessed right, I went ahead with the few ingredients I could find in my kitchen.
-Ginger, Lemon Grass, Coconut Milk, Prawns, Chestnut Mushrooms, Chilli
First things first you want to make a broth using your Ginger, Mushrooms, Lemongrass & Prawns- add water until you have a beautiful brownish broth & lemongrass zesty scent filling the space of your room.
Next thing you add coconut milk or cream to your broth until it thins & simmers for another 10 mins. Add chilli to your taste whether you like it mild or hot.
Very simple & delicious Thai soup.
